Southwestern Burgers
Ingredients:
1 lb. ground beef
½ cup corn (fresh, frozen, or canned)
½ cup black beans, drained and rinsed
1 tsp salt
1 tsp cumin
1 tsp chili powder
1 tbsp cilantro, chopped
4 slices pepper jack cheese
4 hamburger buns
Directions:
Combine ground beef, corn, beans, salt, cumin, chili powder,
and cilantro in a large bowl. Divide
mixture and shape into 4 patties.
Grill burgers over high heat until cooked through. Top each patty with a slice of pepper jack
cheese. Place on buns and top with
chipotle ketchup.
Makes 4 servings.
I am not usually a fan of pepper jack cheese, but I really liked it on this burger. The burger itself isn't spicy, more of a smoky chili flavor. The spiciness of the cheese and the ketchup was just perfect with it.
