These are the muffins I made for my sister's baby shower last month. I don't bake, but I was doing a brunch menu and I thought muffins were needed. This recipe is really easy and they came out beautifully for me. I got it from Recipezaar, and made a few changes that were recommended by reviewers there.

Cranberry Orange Muffins

Ingredients:
1 cup dried cranberries
¾ cup orange juice, plus more for rehydrating
2 cups flour
¾ cup sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 egg
⅓ cup vegetable oil
rind of one orange, grated
raw sugar

Directions:
Preheat oven to 425°.

Pour cranberries into a small saucepan and add orange juice until just covered. Heat over very low heat until cranberries plump up. Remove from heat and drain.

Combine dry ingredients. Stir in cranberries. Beat egg, ¾ cup orange juice, oil, and orange rind. Add to dry ingredients all at once. Stir just to moisten. Spoon into greased muffin cups. Sprinkle tops lightly with a bit of raw sugar.

Put into oven and turn temperature down to 400°. Bake about 20 mins until lightly browned and firm to the touch.

Makes 12 muffins.


These went over very well at the shower, and I am planning on making them again for a church breakfast in a couple of weeks.
