Last week I made a ham in the slow cooker.  I had never done that before, but I was really craving ham and Easter is a long time away! Since I was in an "Easter dinner" mood, I wanted some kind of cheesy potato to go with it.  I was going to make some kind of baked mashed potato casserole, but once I started adding stuff to the potatoes I decided they were too good to mess with and served them as they were.  They morphed into these super delicious mashed potatoes.  All the flavors of a loaded baked potato (sour cream, cheese, bacon, and green onions) stirred into mashed potatoes.


Loaded Baked Potato Mashed Potatoes


Ingredients:
2 lbs. russet potatoes, peeled and diced
¼ cup butter, melted
½ cup sour cream
Milk (optional)
2 slices bacon, cooked and crumbled
½ cup cheddar cheese, shredded
2-4 green onions, sliced


Directions:
Boil potatoes in salted water until tender.  Drain.  Return to pot and mash with potato masher to desired consistency.  Add melted butter and sour cream and stir until well combined.  Add milk to thin out if desired.  Stir in bacon and cheddar cheese.  Place green onions on top and serve.


Makes 6-8 servings.

These potatoes were phenomenal!  They were so light and fluffy with just the right amount of bacon and cheese.  They were the perfect accompaniment to my ham.  It doesn't happen very often where I make up a recipe and it turns out as perfectly as this one did.  We love our potatoes around here, so I will definitely be making these again!
