I didn't cook dinner last night, so I had to look in my food pics archives to see what I could share with you today. I found a picture of Peanut Butter Rice Krispy Treats, which is a dessert I have made a few times now but haven't blogged about yet. This is a recipe I saw in Lucinda Scala Quinn's cookbook Mad Hungry. It's a simple twist on Rice Krispy Treats.
Peanut Butter Rice Krispy Treats
1 cup light corn syrup
½ cup sugar
½ cup light brown sugar
1½ cups peanut butter
2 tsp vanilla extract
4 cups Rice Krispies
Line a 9x13” baking pan with wax paper or parchment paper. Place the corn syrup and sugars in a large saucepan over medium heat and stir to combine. Bring to a boil. Remove from the heat.
Stir in the peanut butter and mix well to combine. Quickly stir in the vanilla and Rice Krispies. Spread into the lined baking pan. Cool and slice into squares.
Makes 24 bars.
This is as really simple dessert that I like to take to church potlucks. It's super easy, but is just a tiny bit fancier than regular Rice Krispy Treats.
